To make sandesh, first you need cottage cheese (chhana), I took 1 liter of full-fat milk and churned cheese (chhena), then stirred in a mixer just 2 to 3 times, the chhena became very smooth.
I will make it with Himsagar mangoes। cut two mangoes and throw away the pulp. cut the mangoes and churn them a little, mango pulp is ready.
Take a medium size bowl of milk powder, took some sugar - milk powder is sweet and so is mango - hence take just a little bit of sugar, 1/2 bowl of sugar should be sufficient.
You will need about 1 spoon of ghee, and look, I have soaked some saffron in milk, I will use this milk. I soaked a pinch of saffron in hot milk. Cut some dry fruits very thinly.
Now let's start making the sweet - mango sandesh.
Heat the ghee in a flat pan and add the cheese (chhena), mix them well with the ghee. The entire cooking should be done on low medium flame, otherwise the chhena will get burnt.
I cooked the chhena for 8 to 10 minutes, now add milk powder, milk powder will be very creamy, add 3 to 4 spoons of sugar. Stir everything well.
I cooked it well for another 3 minutes, then I put the mango paste in it.
Look, I didn't use any artificial color, I didn't use any flavors, it's a pure mango paste, Himsagar mango has its own beautiful smell, and you can see the color. Mix the mango pulp well with chhena.
The mango is mixed very well with the chhena and a very nice paste is made, now I added the milk mixed with saffron. After adding it, the color becane more beautiful and the flavor is also very good, mango and saffron mixed together gives a great flavor.
Now I am mixing the dry fruits cut earlier.
Our mango sandesh is ready. Now I have spread some ghee in a big dish, I am slowly pressing the hot sandesh a little, it has to be done in hot condition otherwise it will not be given the shape and it will not be cut properly.
I have given a shape like a rectangle, I am spreading some dry fruits in it and pressing it, otherwise it will fall down when we do the cutting.
Now cut it with a knife, you can give the shape as you like, you can also use any mold. Since there is ghee applied at the bottom, there is no problem with cutting.
As you watched here, you can easily make aam sandesh with very common things at home.
