To infuse some Indian flavour I added some onion, tomatoes, green chillies (very little) and coriander.
And, adding a slice of cheese can definitely take the flavor to the next level, as cheese adds the creamy texture and salty flavor that compliments the potato and eggs beautifully.

Cut the potatoes, onions, tomatoes, capcicums in cube shape.
Heat 2 teaspoons of oil. Fry all the vegetables.
Beat the eggs. Add salt, pepper and green chillies. Add the fried vegetables in the eggs.
Add 1 teaspoon oil in the pan and Add the egg mixture. Cover and cook for 2 to 3 minutes.
Add cheese slice and coriander leaves. Flip it with a help of a plate.
Cover and cook the other side for 2 minutes.
Add cheese and coriander. Serve hot.
